Flag Poke Cake
Make a sugar-free low carb yellow cake. I used the Trimtastic Cake from Trim Healthy Cookbook using yellow squash and substituting THM Baking Blend for the cocoa powder. Here is another great recipe. . Make 3oz. box of sugar-free strawberry gelatin using the quick-set instructions on the box. Let sit in the fridge for about 15 minutes. , Poke holes all over the cake (I used a chopstick). Pour the gelatin over the top of the cake. Let chill for a couple hours. . Make the frosting in the recipe linked above. Frost the cake and decorate like a flag. Enjoy and happy 4th of July!!
