Black Bean Soup šā¤ļøš
1 teaspoon onion powder 1 tablespoon chili powder 1 teaspoon ground cumin 2 15-ounce cans black beans, rinsed 3 cups water 1/2 cup salsa 3/4 teaspoon salt 1 tablespoon lime juice 1/4 cup chopped cilantro or 1 drop cilantro essential oil
Add water, onion powder, chili powder, and cumin to a soup pot and begin heating. Add beans, salsa, and salt. Bring to a boil; reduce heat and simmer for 10 minutes. Remove from the heat and stir in lime juice and cilantro. Blend as much of the soup as desired for the consistency you prefer (use caution when pureeing hot liquids). We prefer to blend all of it. I enjoy with a dollop of fat-free Greek yogurt plus baked corn chips or sprouted bread. The growing children top with cheese and sour cream while dipping with regular corn chips.
